My youngest daughter is a very picky eater which makes packing her lunch a challenge. She’s not a fan of most sandwiches, or vegetables, or anything that’s not covered in chocolate. However, she is a big fan of tomatoes so I usually try to incorporate them into her school lunches. SUNSET® produce sent me a variety of tomatoes, peppers, and cucumbers for us to try, so I’m going to show you how I used them in these heavenly lunches!

Lunchbox Ideas - Pasta Salad

Pasta salad is a family favorite. I usually make a big batch which can last up to three days. It makes a quick and delicious lunch for myself or after school snack for the kids. I included bow tie pasta, black olives, broccoli, Wild Wonders® tomatoes, and italian parmesan dressing, but you can add anything you like. (more…)
